Some examples of food
The marketability of food is regulated by the German Food and Commodities Act and a number of other laws and regulations. Two essential basic principles for the marketing of food must be noted. On the one hand, food may not endanger consumers' health, while on the other, consumers may not be misled by the labelling and presentation of food. Conformity with these two maxims, health protection and protection from fraud and deception, is checked by our experts and laboratories on the basis of the food, its packaging and presentation, as well as on the spot when on sale (hygiene instructions).

Foods are subjected to microbiological and chemical testing in our laboratories to check for any potential hazards, as well as to ensure that the contents comply with statutory regulations or any claims affecting their levels.

Microbiological and chemical analysis is the basis for assessing the quality of food and judging it in accordance with statutory requirements.

Microbiological examinations

  • determining the germ count of food
  • selective proof of agents spoiling food
  • selective proof of pathogenic bacteria (salmonella, listeria, legionella, bacillus cereus, staphylococcus, pseudomonas, chlostridium perfringens)
  • identifying yeast and mould
  • differentiating types of germs
  • microbiological/hygienic rapid proof, using ATP measuring
  • contractual research and development work
  • examining cross-checks and second samples
  • checking drinking water in accordance with the drinking water directive

Chemical examinations

  • analysis of nutritional value (water, fat, protein, ash, roughage)
  • carbohydrates (glucose, fructose, saccharose, lactose, starch, …)
  • minerals and trace elements
  • additives such as preservatives, colouring, …
  • contaminants and residues, e.g. heavy metals

These tests are based on recognised examination procedures in accordance with section 35 of the German Food and Commodities Act, DIN, DAB or Ph:Eur., DFG, IFU and others.

To check that you are meeting the requirements of the German Food and Commodities Act, we can offer you a visit and briefing on the spot, at your plant or branches. As well as checking the hygiene regulations, we also examine presentation and marking of food on the spot. And of course we can also take any samples required, on the spot, in accordance with a jointly agreed sampling schedule.
